The World’s Largest Matanza in Belen, New Mexico attracted hungry visitors with the smell of roasted red chile and chicharrónes. Organized by Fernando Sisneros, the event aims to bring the community together through food and friendly competition. Over 40 teams participated, serving delicious dishes like red chile donuts and chicharrónes that had attendees coming back for more. The event, which featured 40 hogs, 2,000 pounds of potatoes, 200 gallons of red chile, and 20,000 tortillas, raised funds for scholarships for students in the Valencia school district. In the past 25 years, the matanza has raised nearly $300,000 in scholarships. Attendees enjoyed the food and camaraderie, with many expressing excitement to return for future events. The event not only provided a feast for the senses but also served as a way to give back to the community through education.
